Banana Pancakes

Ingredients:

1 Banana

2 Eggs

1 Tsp of Ground Cinnamon

Instructions:

  1. Mash banana in a medium bowl
  2. Add eggs and cinnamon
  3. Whisk until well combined
  4. Heat a large skillet over medium heat
  5. Spray pan with nonstick cooking spray or use butter
  6. Spoon batter into skillet to form small round pancakes, working in batches if needed
  7. Cook flipping halfway through until deep golden brown, about 5 minutes total
  8. Transfer to plate and add maple syrup and fresh fruit for topping if you like
  9. Enjoy!

Tuna Melt

Ingredients:

2 (5 ounce) cans water-packed white tuna, drained

1/2 cup mayonnaise

1 tablespoon dijon mustard

4 slices country white bread

4 cheddar cheese slices

Instructions:

  1. In a bowl, combine the tuna, mayo, and mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper
  2. Heat a large skillet over medium heat
  3. Heat butter in the pan
  4. Place for slices of bread in the pan
  5. Place one slice of cheese on each slice of bread
  6. Spread tuna on top of 2 slices of bread
  7. Place the other slice of bread on top of the other, making two sandwiches
  8. Cook until bread is golden brown and cheese is melted
  9. Enjoy!

 

Chicken Parmesan

Ingredients:

8 ounces rigatoni, cooked al dente

24 ounce spaghetti sauce

3/4 cup shredded mozzarella

4 boneless skinless chicken breasts (cut into cubes)

1/4 cup shredded parmesan

Instructions:

  1. Preheat oven to 350 Degrees
  2. Mix together rigatoni, 3/4 of the spaghetti sauce, mozzarella, and salt and pepper to taste
  3. Place mixture in the bottom of a deep dish baking pan
  4. Place chicken breast on top of the pasta
  5. Cover with the remaining spaghetti sauce and parmesan
  6. Bake for 30 minutes until the chicken is cooked through
  7. Enjoy!
